The classic Fettuccini Alfredo was invented in Rome at a place called Ristorante Afredo alla Scrofa.

In fact, the original, real and classic Fettuccini Alfredo has only three ingredients. Fettuccini, sweet whole butter and aged Parmigiano-Reggiano. That’s it! You will be flabbergasted at how delicious these three simple ingredients work together to create pasta magic.

And that is exactly how Mama Marucci’s serves this iconic dish which has been destroyed with “improvements” by so many “chefs”. In the 80’s it was a restaurant standard in fine dining rooms across the country but within a few years, it had worked its way into kitchens at every level. Once a very special dish, it’s now offered on fast food pizzas and packaged industrially as a sauce that is sold to restaurants.
