Fresh Roasted Beets with Pistachios and Gorgonzola

Beets have the distinction of being either loved or hated. They are however, available year-round and can be enjoyed hot or cold. Here we serve them cold after they have been properly roasted and marinated.

After cooking we slice and marinate the beets in oil and vinegar. Right before service, we add chopped pistachios, crumbled gorgonzola cheese, a few red pepper flakes to give it a slight kick and some minced chives.

Even if you’ve never liked beets you owe it to yourself to try this combination. If after this dish you still are not a fan, I will personally contact San Gennaro on your behalf and ask him to forgive you.
