This is one of our few house specialities. Our pesto is made with pistachios, basil and mint. The garlic we add is so minimal you can barely taste it. Of course, we use real Parmigiano-Reggiano and fruity extra virgin olive oil, but the real secret to a world-class pesto comes in the way it’s added to the pasta and what is done to make the dish creamy, light and refreshing.
With that said you can choose to have this served with many different shapes of pasta, but we prefer an artisan Fusilli and toasted breadcrumbs as a finishing touch.
