Arrabiatta means angry in Italian. So this is mad rigatoni. What it really alludes to is the sauce being spicy.
We start as we always do with extra virgin olive oil, some garlic (very little), a few different types of peppers to add depth of flavor (some of them are not hot, but rather sweet). We then add in some tomato paste and San Marzano tomatoes. This is cooked down very slowly to create a rich thick consistency. We then add fresh basil and adjust the seasonings.
The water meanwhile is brought to a boil, the pasta added and cooked till just underdone. It’s then finished off in the sauce and served with a sprinkling of fresh grated Parmigiano-Reggiano. If you like spicy, you’ll love this dish. It’s one of Mama Marucci’s favorite offerings.
