Magic happens here when sweet and salty meet in a bed of mozzarella, gorgonzola, toasted pinenuts, and fresh thyme.
The combination could not be better. Fresh pears are caramelized. We then spread a nice layer of mozzarella on the expertly fermented dough and add the reserved pears. Next crumbly gorgonzola is sprinkled on along with a generous handful of toasted pine nuts and a pinch of fresh thyme.
