Southern Italians are the masters of growing exceptional fruits and vegetables. For many generations, meat and even cheese was a luxury few could afford on a regular basis. Forced to make do, they pioneered many ways of cultivating unique versions of fruits and vegetables. In addition, by using the rich volcanic soil of the area, they gave themselves an unfair advantage over the rest of us.
Here, baby butternut squash are lovingly wrapped and roasted to perfection. These tender gourds (botanically fruits) are then laced with a little butter and cinnamon.
Toasted pumpkin seeds are sprinkled all over and dollops of creme fraiche are added for a creamy brightness that is meltingly delicious.
